Each week you will receive your step by step guide on each topic, complete with all our hints and tips and a weekly work program

Week 1 – Let’s get started

Like all good things we do have to cover some basics first. Choosing a business name and a domain name, a quick look into any Health and Safety Requirements and deciding where you will work from. We will dive a little deeper into getting social pages up and running and a website to get you started. Don’t worry we will be looking to save you time and money so can get your catering business profitable as soon as possible.

Week 2: Equipment & Staples you need – Presentation

From saucepans, gloves and knives to sugar, spices and all things nice. What you need to get you started, what you may need in the future and what you don’t need to waste your hard earned money on. We will look at pantry staples, building your stocks and avoiding wastage.

Week 3: How do you make money? – Our Unique System

How much do I charge? – perhaps the most common questions for those new to the catering industry. With our unique system you won’t have to worry about quantities, serving sizes, pricing (what to charge to make money) and all the other issues facing the traditional catering companies. Each function will be its own profit centre so you will never run a function at a loss or not have enough food or not have enough staff.

Week 4: Finger Food

Finger food is the most adaptable of all catering options. As the name suggests it is designed to be eaten with the fingers so we will look at the implications when serving these foods. (too hot to handle, too much sauce too large to hold etc). From small gatherings to have with drinks to finger food that replaces a main meal and everything in between. You will have access to our finger food menus and associated costs complete with pricing suggestions. You will know how much food to prepare and how to work with your client to set the menu.

Week 5: Board Room Catering – Corporate

A growing market for caterers and can include morning and afternoon teas, breakfasts, lunches or after work functions. Some will require staffing while others will simply need food delivered. In this week you will look mainly at delivered platters that are stylish but functional for a workplace meeting. You will learn to provide appropriate menus and choices, staffing levels and costs. Our recipes and ideas and serving suggestions will be included.

Week 6: Buffets/Grazing Tables

Allowing guests to choose food themselves from a selection of dishes will give you the flexibility to cater to most tastes. Our unique system will again make costing and service easy and profitable. With delicious recipes and serving ideas from everyday favourites to those designed to impress, you will have most tastes covered. We will look at the best ways to run a buffet service, how to set up, and what equipment you will need. You will also learn how to always keep the buffet looking fresh and appetising. No-one wants to see dried out and untidy leftovers on a buffet spread.

Week 7: Plated Meals – Dinner Parties and Functions

From an intimate dinner party for 2 to a dinner for 12 at someone’s home to a plated meal at a large function, you will be guided through the costing process, menu selections and charges. You will learn how to liaise with your clients so you will know exactly what you will need to provide including staff, equipment and any little extras they may need. Our recipes are designed to work for 2 or many. With plated menus, we will also guide you through dietary requirements and options.

Over the next four weeks, it’s time to start cooking and looking at the four major types of functions and appropriate recipes.

Week 8: Food Allergy and Dietary Requirements

Gluten Free, Dairy Free, Vegetarian, Vegan – Don’t stress – it is not that hard. Although you really must ask these questions today before making any recommendations regarding your menus. It is imperative that in these cases you are absolutely sure of what ingredients are in which dish. You will learn new recipes for each requirement and also how to adapt existing recipes. Ensuring there is no cross contamination is just as important and there are easy ways to prevent this. Don’t ever feel that you have to agree to doing a function where the requests are above what you can comfortably do. We will also address this and give some insights on how to handle these situations.

Week 9: Wine, Drinks Service – Running the bar

Drink service can be run together with the provision of your catering services or as an independent service. There are some rules and regulations you will have to adhere to with the service of alcohol and we will address these. You will learn how to calculate drink quantities, what to serve when and we will include an introduction to wines and cocktails. We will cover bar equipment, glasses and costs associated with staffing and beverage costs.

Week 10: Let’s get marketing

You have covered the basics, so let’s look at how to promote your business. There are many options which can consider and we will take you through them all so you can choose what suits you and your budget and your catering style. We will look at specific dates and events and how you can target these opportunities. The easiest way to attract more business is always via word of mouth and referrals and you will learn the art of getting good reviews, testimonials and referrals.

Week 11: All the extras –

Knife skills, napkin folds, table settings, waiting skills. This week you will learn about all the little extras that will make things easier, safer and often more profitable for your business. Always cutting yourself with the knife – we’ll show you how not to let the knife win. Learn how to carry a tray of drinks like a professional, carry and clear plates. We’ll take a look at the sequence of service, some table settings, and napkin folds giving your business the edge.

Week 12: Ready to go!

So your first function is looming (or perhaps you have already started) so we have compiled a couple of check lists for you. One for the food preparation and additional items you may need to take with you for each dish such as sauces, garnishes, serving plates or equipment and a second function run sheet guide where necessary and some additional items to carry just in case. We will also share some of our tips and experiences of ‘What to do when …’ happens and take a look at common service mistakes.
